To make Quince koeckjes1
Take whole Quinces, rub them clean, cook them in water, let them boil unpeeled until they are soft, take them out, cover them with a cloth until they are luke-warm, remove the skins also the core and the hard parts and mash them [the quinces] very fine, take as much Sugar as [you have] Quince pulp, mix together and place on the fire, let it boil; when it has been boiled sprinkle a clean board with Sugar and place it on there, form little cakes. Let them cool, place them on a stoof2 with fire until they are dry; you can save them in clean paper as long as you please.
